Tossed in a zesty homemade dressing, it’s a healthy and crowd-pleasing Tex-Mex favorite that's ready in minutes and packed with flavor.

Ingredients

  • 3 Roma tomatoes, seeds removed and diced

  • ⅓ cup diced red onion

  • 1 (15 oz) cooked black beans, rinsed and drained

  • 1 (15 oz) cooked pinto, rinsed and drained

  • 1½ cups frozen corn kernels, thawed

  • 1 bell pepper (any color), diced

  • 1 jalapeño, seeds removed and finely diced

  • ⅓ cup chopped fresh cilantro

  • 2 avocados, diced

Dressing

  • ¼ cup olive oil

  • 1 tablespoon lime juice

  • 1 tablespoon red wine vinegar

  • 1 teaspoon sugar

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ¼ teaspoon garlic powder

Directions

    1. In a large bowl, combine the tomatoes, avocado, red onion, black beans, pinto beans, corn, bell pepper, jalapeño, and cilantro. Toss gently to mix.
