Bok Choi (Pak Choi)
Also called Chinese chard. 38 days. Non-hybrid version of 'BoPak'. Essential in Asian stir fry and soups, with a mild mustard flavor and a hint of sweetness. Does not head but forms a cluster of smooth, dark green leaves on top of creamy white stalks. 15 to 20-in. tall.
