Growing Bok Choi (Pak Choi)

Bok Choi, also known as Pak Choi or Chinese chard, is a fast-growing Asian green prized for its crisp white stalks, smooth dark green leaves, and mild flavor with a hint of sweetness. Unlike heading cabbages, it forms loose, upright clusters of tender leaves and crunchy stems. This open-pollinated variety is a dependable choice for cool-season gardens and offers excellent versatility in the kitchen.

Start Bok Choi indoors about ¼ inch deep, or grow it hydroponically. Space plants 12 to 18 inches apart and grow in full sun. Plants typically reach 15 to 20 inches tall. For a longer harvest season, make successive sowings every couple of weeks during cool growing weather.

Ready to harvest in about 38 days, pick young plants for tender baby greens or allow them to mature for larger leaves and thicker, crunchy stalks.
