Murasaki Sweet Potato Plants
Growing Murasaki Sweet Potato Plants
‘Murasaki’ is a distinctive Japanese-style sweet potato prized for its smooth purple skin, creamy white flesh, and rich, nutty flavor. This patented variety is especially valued for its strong disease resistance and dependable garden performance, making it a standout choice for gardeners looking for something a little different from traditional orange-fleshed sweet potatoes.
Plant ‘Murasaki’ sweet potato slips after all danger of frost has passed and the soil has thoroughly warmed. Choose a location in full sun with loose, well-drained soil, and space plants about 12 to 18 inches apart. Set each slip deeply enough to cover the lower stem and roots while keeping the upper leaves above the soil line. Water thoroughly after planting and keep the soil evenly moist while plants become established.
Ready to harvest in about 100 days, dig roots once they have reached a useful size and before cold weather arrives. Harvest carefully to avoid bruising or cutting the skin, then cure freshly dug sweet potatoes before eating or storing for the best flavor and keeping quality.
Rich, slightly sweet, and nutty, ‘Murasaki’ is excellent for baking, roasting, mashing, and other dishes where its drier, creamy texture and unique flavor can shine.
