Growing Antares Hybrid Fennel

‘Antares’ is an award-winning hybrid fennel and 2017 All-America Selections Winner, notable as the first fennel ever to receive the prestigious AAS Award. Plants produce sweet, pure white bulbs with a fragrant licorice-like flavor, along with delicate, lacy fronds that add ornamental beauty and attract butterflies. Earlier, sweeter, and more bolt resistant than many other fennel varieties, ‘Antares’ offers both garden performance and visual appeal.

Start ‘Antares’ indoors for transplanting about ¼ inch deep. Space plants about 18 inches apart and grow in full sun. This variety is well suited to containers and performs best in fertile, well-drained soil with consistent moisture.

Ready to harvest in about 58 days, begin cutting the bulbs once they are full and well formed, while the texture is still tender and the flavor is at its sweetest.

Sweet, fragrant, and ornamental, ‘Antares’ is excellent for fresh eating, roasting, sautéing, and adding beauty to pollinator-friendly gardens.
