Early Wonder Heirloom Beet
Growing Early Wonder Heirloom Beet
‘Early Wonder’ is an early-maturing heirloom beet prized for its flavorful greens, tender roots, and dependable garden performance. Tall, leafy tops are especially well suited for harvesting as beet greens, while the deep red roots develop a rich flavor and tender texture that make this variety useful from top to root.
Sow ‘Early Wonder’ directly in the garden about ½ inch deep during the cooler temperatures of spring or fall. Space plants 2 to 4 inches apart and grow in full sun. Plants typically reach 16 to 18 inches tall and perform best in loose, well-drained soil with consistent moisture as the roots develop.
Ready to harvest in about 50 days, pick young tops as needed for fresh greens, taking care to leave enough foliage for continued root growth. Begin pulling the 3- to 4-inch roots once they reach your preferred size while they are still firm and tender.
Flavorful, tender, and versatile, ‘Early Wonder’ is excellent for fresh cooking, beet greens, roasting, and pickling.
