Growing Arugula
Arugula is a fast-growing, cool-season green that performs best in the mild temperatures of spring and fall. Sow seeds directly in the garden in well-drained soil, keeping the seedbed consistently moist while they germinate and establish.
For a steady harvest, sow another round every 2–3 weeks. Leaves can be harvested young for a milder flavor or allowed to mature for a stronger, peppery bite. Regular harvesting encourages continued leaf production.
Arugula grows well in full sun during cooler weather and can benefit from some afternoon shade as temperatures rise. Warm weather can cause plants to bolt more quickly, so gardeners in hotter climates may have the best results growing arugula during the cooler parts of the season.
Harvest individual outer leaves as needed or cut the plant above the growing point for a larger harvest. With succession planting and regular picking, arugula can provide a steady supply of fresh greens for salads, sandwiches, pizzas, and more.
