O'Henry Sweet Potato Plants
Growing O'Henry Sweet Potato Plants
‘O’Henry’ is a distinctive sweet potato variety prized for its smooth, stringless golden flesh and rich, naturally sweet flavor with notes of honey and nuts. Cream-colored roots develop a tender texture with a drier consistency than many orange-fleshed sweet potatoes, making them especially well suited for baking.
Plant ‘O’Henry’ sweet potato slips after all danger of frost has passed and the soil has thoroughly warmed. Choose a location in full sun with loose, well-drained soil, and space plants about 12 to 18 inches apart. Set each slip deeply enough to cover the lower stem and roots while keeping the upper leaves above the soil line. Water thoroughly after planting and keep the soil evenly moist while plants become established.
Ready to harvest in about 95 days, dig roots once they have reached a useful size and before cold weather arrives. Harvest carefully to avoid bruising or cutting the skin, then cure freshly dug sweet potatoes before eating or storing for the best flavor and keeping quality.
Sweet, aromatic, and pleasantly dry-textured, ‘O’Henry’ is excellent for baking, roasting, mashing, and other dishes where a smooth, rich sweet potato texture is preferred.
