Growing Chioggia Heirloom Beet
‘Chioggia’ is a classic Italian heirloom beet prized for its striking pink-and-white interior rings, sweet flavor, and tender texture. The round, candy-red roots reveal their distinctive concentric pattern when sliced, while the tender green tops and pink stems can also be harvested for fresh use.
Sow ‘Chioggia’ directly in the garden about ½ inch deep during the cooler temperatures of spring or fall. Space plants 2 to 4 inches apart and grow in full sun. Plants typically reach 8 to 10 inches tall and perform best in loose, well-drained soil with consistent moisture as the roots develop.
Ready to harvest in about 55 days, begin pulling the 2-inch roots once they reach your preferred size while they are still firm and tender. Young greens can also be harvested as needed, taking care to leave enough foliage for continued root growth.
