Growing Information

Growing Harris Early Model Parsnip

‘Harris Early Model’ is an open-pollinated parsnip prized for its dependable performance, coreless roots, and delicately sweet flavor. This long-standing garden standard also produces roots that are relatively easy to dig at harvest.

Sow ‘Harris Early Model’ directly in the garden about ¼ inch deep and space plants 3 to 5 inches apart. Grow in full sun. This cold-tolerant root crop performs especially well through cool growing conditions.

Ready to harvest in about 115 days, begin digging roots once they reach the desired size while the flesh remains tender.

Sweet, tender, and versatile, ‘Harris Early Model’ is excellent for roasting, soups, stews, mashing, everyday cooking, and storage.
