Growing Bok Choi (Pak Choi)
Bok Choi, also known as Pak Choi or Chinese chard, is a quick-growing Asian green that forms clusters of smooth, dark green leaves on crisp, creamy white stalks rather than developing a traditional head. It has a mild mustard flavor with a touch of sweetness and is the non-hybrid counterpart to ‘BoPak’ Pak Choi Hybrid.
Bok Choi grows best during the cooler temperatures of spring and fall and can be sown directly in the garden or started indoors for transplanting. Keep the soil consistently moist as plants establish, and provide plenty of room for the leafy clusters to develop.
For an extended harvest, make successive sowings every couple of weeks during suitable growing weather. Plants can be harvested young for tender baby greens or allowed to mature for larger leaves and thicker, crunchy stalks.
Freshly harvested Bok Choi is especially versatile in the kitchen, adding crisp texture and mild flavor to stir-fries, soups, salads, braised dishes, and other Asian-inspired recipes.
