Growing Chioggia Heirloom Beet
Chioggia’ Beet is an Italian heirloom prized for its striking interior rings of bright pink and white and its sweet, mild flavor. The round, candy-red roots are especially attractive when sliced, while the tender tops and pink stems can also be harvested for fresh use.
Sow ‘Chioggia’ directly in the garden during the cooler temperatures of spring or fall. Plant in loose, well-drained soil and keep the seedbed consistently moist while seedlings establish. Thin plants as they grow to give the roots enough room to develop evenly.
Harvest the roots while they are still tender for the best sweetness and texture. The young greens can also be picked and used much like spinach, though leaving enough foliage on the plant will help the roots continue to size up.
‘Chioggia’ beets are excellent for fresh eating, slicing, salads, roasting, and cooking, and their colorful rings make them especially appealing for dishes where presentation matters.
