Growing Arugula
Arugula is a fast-growing, cool-season green prized for its tender leaves and distinctive peppery flavor. Young leaves offer a milder taste, while mature foliage develops a bolder, spicier bite. Quick to grow and easy to harvest, arugula is an excellent choice for spring and fall gardens.
Start arugula indoors or grow it hydroponically. Plant seeds about ¼ inch deep, space plants 3 to 4 inches apart, and grow in full sun to partial shade. Plants typically reach 12 to 18 inches tall and are grown as annuals. For a continuous supply of fresh leaves, sow another round every 2 to 3 weeks.
Ready to harvest in about 35 days, pick young leaves for a milder flavor or allow them to mature for a stronger, peppery taste. Harvest individual outer leaves as needed, or cut plants just above the growing point for a larger harvest.
Fresh, flavorful, and versatile, arugula is excellent for salads, sandwiches, pizzas, wraps, and everyday cooking.
