‘Jacob’s Cattle,’ also known as ‘Trout Bean’ or ‘Coach Dog Bean,’ is a historic heirloom bush bean prized for its distinctive color, rich flavor, and excellent cooking quality. The slender, kidney-shaped beans are creamy white with deep maroon splashes, giving each seed a unique appearance. Especially well known as a New England baked bean, the beans absorb surrounding flavors beautifully while still maintaining their own rich character.
Sow ‘Jacob’s Cattle’ directly in the garden about 2 to 3 inches deep. Space plants about 3 inches apart and grow in full sun. Plants typically reach about 24 inches tall and grow in a compact bush habit, so no trellising is required.
Ready to harvest in about 85 days, pick the pods once the beans inside are plump and tender for use as fresh shell beans, or allow the pods to mature fully and dry on the plants for dry bean use.
