‘Hansel’ is an award-winning hybrid eggplant and 2008 All-America Selections Winner prized for its compact growth, exceptional yields, and tender, sweet flavor. Plants produce clusters of 3 to 6 slender, dark purple fruits that can be harvested at several different sizes while remaining tender, flavorful, and low in seeds.
Start ‘Hansel’ indoors for transplanting about ¼ inch deep. Space plants 3 to 4 feet apart and grow in full sun. Its compact, highly productive growth habit makes this variety especially well suited to containers and smaller gardens.
Ready to harvest in about 55 days, begin picking the fruits once they develop their mature dark purple color and reach your preferred size. Harvest while the fruits are still firm, glossy, and tender for the best eating quality.
