Spinach and Cheese Puff Pastry Bundles

Ingredients

1 sheet frozen puff pastry, thawed
1 egg (for egg wash)
1 tbsp water

Filling

2 cups fresh spinach, finely chopped
½ cup cream cheese, softened
½ cup shredded mozzarella
¼ cup crumbled feta (optional but recommended)
1 small garlic clove, minced
Salt and black pepper to taste
Pinch red pepper flakes (optional)

Instructions

Preheat oven to 400°F and line a baking sheet with parchment paper.

In a bowl, mix the chopped spinach, cream cheese, mozzarella, feta, garlic, salt, and pepper until well combined.

Roll out the puff pastry and cut it into equal squares. Spoon a small amount of the spinach mixture into the center of each square.

Fold the corners of the pastry toward the center, gently pinching them together to form bundles.

In a small bowl, whisk the egg with the tablespoon of water to create an egg wash. Brush the tops of the pastry bundles with the mixture.

Place on the prepared baking sheet and bake for 15–18 minutes, or until the pastry is golden and flaky.

Serve warm and enjoy.
