Recipe of the Month: Corn and Tomato Salad
Our Recipe of the Month for September is made for one last summer celebration. With Labor Day cookouts bringing family and friends together, this Garden-Fresh Corn & Tomato Salad is an easy, colorful side dish that puts the season’s harvest to good use.
Sweet corn and juicy tomatoes are at their best this time of year, making them the perfect pairing for a simple garden-to-table recipe. Fresh basil and red onion add plenty of flavor, while a light lime and olive oil dressing keeps everything bright and refreshing.
For even more cookout flavor, try grilling the corn before removing it from the cob. A little char adds a delicious smoky sweetness that pairs perfectly with burgers, grilled chicken, hot dogs, and other backyard favorites.

Corn & Tomato Salad
Ingredients
4 ears fresh corn
2 cups cherry tomatoes, halved
½ small red onion, diced
¼ cup fresh basil, chopped
2 tablespoons olive oil
1 tablespoon fresh lime juice
Salt and pepper to taste
Instructions
Cook the corn, then remove the kernels from the cob.
In a large bowl, combine the corn, cherry tomatoes, red onion, and fresh basil.
Drizzle with olive oil and fresh lime juice, then season with salt and pepper.
Toss gently until everything is well combined.
Chill until ready to serve, or enjoy right away.
