Classic Mexican Street Corn
Ingredients
6 ears fresh sweet corn, husks removed
¼ cup mayonnaise
¼ cup sour cream
1 garlic clove, minced
½ cup Cotija cheese, crumbled, or feta cheese
1 teaspoon chili powder
½ teaspoon smoked paprika
2 tablespoons fresh cilantro, chopped
1 lime, cut into wedges
Salt, to taste
Instructions
Preheat grill to medium-high heat.
Grill corn for 10–12 minutes, turning occasionally, until lightly charred on all sides.
In a small bowl, combine mayonnaise, sour cream, and minced garlic.
While the corn is still warm, brush each ear generously with the cream mixture.
Sprinkle with cotija cheese, chili powder, smoked paprika, and fresh cilantro.
Serve immediately with fresh lime wedges for squeezing over the top.
