Eggplants or Aubergines
Eggplants, or Aubergines as the French call them, are yet another member of the nightshade family, like tomatoes and peppers. While a mainstay of any European or Asian garden, eggplants in the U.S. are greatly under-appreciated. What a shame, because the eggplant is one of the most versatile of all veggies, assuming the flavor of whatever they are cooked with. While the heirloom "Black Beauty" remains one of the most popular, interesting variations abound. "Fairy Tale" has breathtaking fruits in soft lavender with striking white stripes. Or another heirloom, but this one is from Taiwan: "Ping Tung Long." Regardless of which varieties you choose, all eggplants are very low in calories and fat, high in dietary fiber and loaded with minerals.
