Cucumbers

Cucumbers are the essence of fresh vegetables. They are almost always eaten raw, without benefit of any kind of cooking, so you taste them undisguised and unadorned. With their uniquely cool, refreshing taste, cucumbers come in all sizes and all types. You will want to try both the pickling types that are ideal for gherkins, sweet pickles and dills, as well as the slicers that are long, thin-skinned and slender with crisp, sweet, thick flesh. Both the pickling and slicing types are available as burpless varieties that contain low levels of cucurbitacin, the substance that causes bitterness and increases vulnerability to “burping” after consuming the fruits. With cucumbers being so popular, not only are they available in pickling and slicing types – and both of these come burpless – but each type also is available in a bush version that takes up about half the space of vining varieties. These bush types are ideal for containers and small gardens.
