Beans

The local grocer can’t sell the rich, classic flavor and crunchy texture of freshly harvested beans straight from your garden. One of the easiest crops to grow, beans need warm soil and will not germinate if soil is below 60°F. Inoculate with nitrogen (p. 28) for greatly increased yields. Sow seeds in well-prepared soil 1 to 2-in. deep and 2 to 4-in. apart in rows 18 to 36-in. apart. Many gardeners prefer to plant beans, particularly pole types, in hills about 3 to 5-ft. apart. Germination takes 10 to 15 days. Thinning is rarely needed. A packet of bush beans contains 2 ounces; a packet of filet beans 125 seeds, unless noted otherwise and plants 15 to 20 ft. of row or about 20 hills.
