Apple Crisps With Apple Skins – Wild Side Style Recipe

PREP TIME: 30 MINUTES

BAKING TIME: 50-60 MINUTES

TOTAL TIME: 80-90 MINUTES YIELD: 6-8 SERVINGS

 

Preparation:

Preheat the oven to 350 degrees F.

Grease an 8-inch-square baking pan.

 

Crisp Base:

2 ½ pounds apples, preferably Granny Smith

1/4 cup honey

15 drops stevia liquid

1 tablespoon tapioca flour

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon allspice

 

Directions:

Peel and core the apples. Keep the peels to the side. Now slice apples into ¼-inch slices and put them in a large mixing bowl.

In a blender or food processor, add 6 or 7 apple slices, apple skins, honey, stevia, tablespoon flour, cinnamon, nutmeg and allspice. Process on high for 3 minutes. You want the skins finely chopped so pause every 40 seconds and scrape the sides back down into the mix.

Stir the fine mixture into the large mixing bowl of sliced apples. Spoon on to the greased baking pan and put it aside.

 

Topping:

¾ cup unbleached rice flour

¾ cup rolled oats

½ cup chopped pecans

1/3 cup molasses

1 stick melted butter

 

Directions:

Combine all the topping ingredients in a medium mixing bowl. Mix with wooden spoon until the oats are wet. Spoon over the apples.

Place the pan on the middle rack of the oven and bake 50-60 minutes or until the top is golden brown and the apple slices are tender.

Cool 10-15 minutes. Serve warm or at room temperature.
